Coffee Glazed Brownies


          Last Saturday my daughter had a violin concert at school and I had signed up to send in some brownies. To make it slightly interesting, I added some coffee powder to the recipe. After sending her plain brownies, I did the coffee glaze on a small portion of it. The brownies were a real hit, with the glaze they looked all glossy and dressed up..

Need To Have
  • All Purpose Flour Or Maida - 1 cup
  • Unsweetened Cocoa Powder - 2/3 cup
  • Brown Sugar - 2 cups
  • Chocolate Chips - 1/2 cup
  • Instant Coffee Powder - 2 teaspoons
  • Butter - 4 tablespoons
  • Oil - 1/8 cup
  • Eggs - 2
  • Baking Powder - 1 teaspoon
  • Baking Soda - 1 teaspoon
  • Vanilla Extract - 1 teaspoon
  • Salt - a pinch
  • Milk - 1/4 cup
For the glaze
  • Powdered Sugar - 10 tabs
  • Butter - 1 tablespoon
  • Coffee Powder - 1 + 1/2 teaspoon
  • Water - 2 tablespoons

Method
           Sift the flour, cocoa, baking powder and baking soda and mix the coffee powder in the milk. Beat the eggs, add the oil, melted butter and the brown sugar, mix everything well. Now, mix in the milk, vanilla extract, then slowly add the sifted dry ingredients and salt, mix well, add the chocolate chips ( dusted with little flour ). Pour in a greased pan and bake at 350F for 25 to 30 mins, keep checking after 25 mins.
For the glaze, beat everything together, pour on the top, keep in the fridge to set, then cut into pieces.

Note
I used a 8 by 8 pan and a loaf pan and got 1" thick brownies.
