Ovako to radi unikatica(Katica),meni se svidjelo i sa uzivanjem sam zabiljezila recept !!        



 Prhko tijesto
         175 grama brasna
         75 grama hladnog maslaca
         2 zlice secera
         1 jaje
         1 zlica hladne vode
         Nadjev
         100 grama mekanog maslaca
         100 grama secera
         1 jaje
         1 zlica limunovog soka
         100 grama mljevenih badema
         1 puna zlica brasna
         ca 15 datula, dobre kvalitete
         malo listica od badema / po zelji, moze i bez
         Za glazuru
         5 zlica marmelade od marelica
         1 zlica limunovog soka















Nadjev                                                                                                 
Maslac, secer i jaje kremasto izradii, dodati mljevene bademe i brasno, te limunov sok. Nadjevom puniti podlogu. Datule prepoloviti ili cetvoriti i sloziti po nadjevu. Stranu gdje ste rezali staviti u nadjev. Posipati sa listicima od badema.
    Tart peci 10 minuta na 200 stupnjeva ( tako sam ja pekla….vi prilagodite, svako najbolje zna kako mu rola pece ), smanjiti na 180 i peci daljih 15-20 minuta. Ne previse peci, treba da bude svjetlo-zuta, svjetlija od moje na fotki….
    Marmeladu i limunov sok ugrijati, namazati sa cetkicom po jos toplom tartu.

Tartine's Lemon Cream Tart

Tartine Lemon Cream Tart

I had enough pine nut crust dough from making Thomas Keller's lemon tart to make one more tart, so I figured I would make one more lemon tart for comparison.  Tartine's lemon cream recipe had caught my eye a while back so I decided to try that as the filling.  Comparing the three recipes, this one has almost the same ratio of ingredients as Keller's except it has twice the amount of butter.  And it's a little easier than Keller's because it uses Lazy Mary's method of using a blender to incorporate the butter instead of doing it over a steaming hot pot of water.

Lemon Cream Tart (from Tartine)
makes 1 tart

1/2 cup + 2 tablespoons lemon juice (Meyer or regular, I used regular)
3 large eggs
1 large egg yolk
3/4 cup sugar
Pinch of salt
1 cup (2 sticks) unsalted butter
1 pre-baked tart shell at room temperature (I used Thomas Keller's pine nut crust)

Pour water to a depth of about 2 inches into a saucepan, place over medium heat, and bring to a simmer.

Combine the lemon juice, whole eggs, yolk, sugar, and salt in a stainless steel bowl that will rest securely in the rim of a saucepan over, not touching, the water. (Never let the egg yolks and sugar sit together for more than a moment without stirring; the sugar will cook the yolks and turn them granular.)

Place the bowl over the saucepan and continue to whisk until the mixture becomes very thick and registers 180° F on a thermometer. This will take 10 to 12 minutes. If you don't have or trust your thermometer, don't worry. It should thicken to the point that your whisk leaves a trail through the curd.

Remove the bowl from over the water and let cool to 140° F, stirring from time to time to release the heat.

Meanwhile, cut butter into 1-tablespoon pieces. When the cream is ready, leave it in the bowl if using an immersion blender, or pour it into a countertop blender. With the blender running, add the butter 1 tablespoon at a time, blending after each addition until incorporated before adding the next piece. The cream will be pale yellow and opaque and quite thick.

Pour the cream into your pre-baked tart shell and cover with plastic wrap.  Cool to room temperature and then place in the refrigerator to chill for several hours.

Out of the three, this was definitely my favorite lemon tart.  The lemon cream was a perfect balance of sweet and sour, of acidity and creaminess.  I was afraid that it wouldn't set enough to cut into slices, but after a few hours in the fridge, it was actually firm enough to cut.

I was lucky enough to go to Tartine recently for my birthday and try an authentic Tartine lemon cream tart.  They didn't use a pine nut crust, but other than that, I'd say that it tasted pretty much exactly the same as the one this recipe makes!

Lazy Mary's Lemon Tart

Compared to Thomas Keller's lemon tart, this lemon tart recipe that I found on Food 52 is incredibly simple.  In fact, the hardest part might be finding a Meyer lemon.  I had never bought one before, so I was expecting a larger than normal lemon, especially since the recipe only calls for one Meyer lemon, but they turned out to be smaller than the lemons I was used to.  And the fragrance--do all Meyer lemon rinds smell like jasmine?  Because if they do, I might have to seriously consider moving to California just so I can have my own Meyer lemon tree.

One big difference you'll notice about this recipe is that the entire lemon (seeds, too, although I chickened out and tossed at least half the seeds) goes into the filling.  Meyer lemons have a thinner skin than normal lemons, and it's common to see the whole Meyer lemon being used in recipes like Shaker pies.  I wouldn't recommend using a regular lemon for this recipe; I've eaten lemon bars made with whole lemons before and the pith made them way too bitter.

makes 1 tart

1 large Meyer lemon (about 4 oz.) cut into 8 pieces
1 1/2 cup superfine sugar
1 stick butter
1 teaspoon vanilla
4 eggs
Your favorite tart shell, pre-baked (I used Thomas Keller's pine nut crust)

Put all ingredients (except tart shell) into a blender and whirl like crazy!

Bake 40 minutes at 350°F (watch that the top does not burn).

This tart tasted a lot more like a lemon bar to me than what I think of when I think of a lemon tart. I wasn't crazy about how it looked either; it probably would benefit from a dusting of powdered sugar on top like lemon bars do.  It was really quick and easy to make, though, so I'd recommend it if you're short on time, but the next (and last) lemon tart that I made is really my ideal lemon tart, and it's easier to make than Keller's!

Thomas Keller's Lemon Tart

After years and years of not owning a tart pan, I finally bought one, and the first thing I wanted to do was make Thomas Keller's lemon tart. My friend, Ellen, had made one with her family and they had raved about how good the pine nut crust was, so I knew I needed to try it.

The pine nut crust recipe makes enough for 3 tarts but is hard to divide since it only uses one egg. Go ahead and make the full recipe and keep the leftover dough in the fridge where it will keep for a couple of days or the freezer, where it will keep for a month, because after you taste it, you'll just want to make more.

Pine Nut Crust (from Bouchon)
makes enough for 3 tart crusts

2 cups pine nuts
1/3 cup sugar
3 cups all-purpose flour
8 ounces unsalted butter, at room temperature
1 large egg
1 teaspoon pure vanilla extract

Place the pine nuts in a food processor and pulse a few times.  Add the sugar and flour and continue to pulse until the nuts are finely ground.  Transfer the mixture to a large bowl.

Add the butter, egg, and vanilla extract and mix to incorporate all the ingredients (the dough can be mixed by hand or in a mixer fitted with the paddle attachment).  Divide the dough into three equal parts.  Wrap each piece in plastic wrap and refrigerate for at least 10 minutes before using.

Preheat the oven to 350°F.  Generously butter and flour a 9-inch fluted tart pan with a removable bottom and refrigerate it while the oven preheats.

Remove the tart pan from the refrigerator.  Use your fingertips to press the chilled pine nut dough evenly over the bottom and up the sides of the pan.  I found that the easiest way to do this was to fill in the sides of the pan first, and then press down whatever dough is left into the bottom. That way you don't have to worry about making sure there is enough dough to evenly press into the sides if you started in the middle.

Prick the tart crust with a fork to prevent it from puffing up unevenly.  Bake the crust for 10 to 15 minutes, then rotate it and bake for another 10 to 15 minutes, or until it is golden brown.  Remove the crust from the oven and let it cool while you make the filling.

The filling for this lemon tart is made using the sabayon method, which means the eggs, lemon juice, and sugar are first cooked over boiling water and then incorporated with the butter.

makes 1 tart

1 pre-baked Pine Nut Crust
2 large eggs, cold
2 large egg yolks, cold
3/4 cup sugar
1/2 cup fresh lemon juice
6 tablespoons cold unsalted butter, cut into 6 pieces

Bring about 1 1/2 inches of water to a boil in a medium pot.  Meanwhile, in a large metal bowl, whisk the eggs, yolks, and sugar for about 1 minute, or until the mixture is smooth.

Set the bowl over the pot and, using a large whisk, whip the mixture while you turn the bowl (for even heating).  After about 2 minutes, when the eggs are foamy and have thickened, add one-third of the lemon juice.  Continue to whisk vigorously and, when the mixture thickens again, add another one-third of the lemon juice.  Whisk until the mixture thickens again, then add the remaining lemon juice.  Continue whisking vigorously, still turning the bowl, until the mixture is thickened and light in color and the whisk leaves a trail in the bottom of the bowl.  The total cooking time should be 8 to 10 minutes.

Turn off the heat and leave the bowl over the water.  Whisk in the butter a piece at a time.  The sabayon may loosen slightly, but it will thicken and set as it cools.  Pour the warm sabayon into the tart crust and place the pan on a baking sheet.

Preheat the broiler.  While the sabayon is still warm, place the tart under the broiler.  Leaving the door open, brown the top of the sabayon, rotating the tart if necessary for even color; this will take only a few seconds, so do not leave the oven.  Remove the tart from the broiler and let it sit for at least 1 hour before serving. Serve at room temperature or cold.

As you can see from the picture above, I didn't do a great job with broiling the top evenly.  It would've been a lot easier with one of those mini blowtorches that you use for creme brulee, I think.

As with all Thomas Keller recipes, this is not simple to make, but delicious to eat.  Since I still had enough crust for 2 more tarts, I decided to try a super easy lemon tart recipe next.

Kis(Quiches)



Jako sam nezadovoljna odgovorima kada se pita :"Koja je razlika izmedu kisa,tarta,pite,..??"
Svako ima neku svoju verziju odgovora ,misljenja,pa tako i ja moju.
Kis dolazi iz Francuske kuhinje.
Temelji se na kremi od jaja,mlijeka i vrhnja,a uz to dolaze dodaci od povrca,mesa,ribe,sira,...
Ako znam da cu imati dosta gostiju,ja napravim tijesto i zamrznem,tako da mi je barem to spremno,a ostalo ide lako.
Pravila sam dva kisa od istog tijesta,samo razliciti oblici i nadjev !!!!!

LOSOS KIS
tijesto
2 case brasna
50gr maslaca
1 zumanjak
1/2 zlicice soli
2-3 zlice hladne vode

Nadjev
150gr dimljenog lososa
4 jaja
300ml vrhnja za kuhanje
1/4 case persuna isjecati
malo kopra ,ako imate
50gr sira za pizzu

Sve sam stavila u multipraktik,pulsala na dugme dok se nisu napravile mrvice,zatim sam istresla na sto i rukama oblikovala loptu,zamotala u prozirnu foliju i ostavila u frizider 30-ak minuta.



Izvadila sam tijesto,razvila i popunjavala oblike koje sam si odredila.
Pazljivo popunila svaku pukotinu,da mi ne curi nadjev,zatim obrezala vrh po kalupicuc i postavila papir za pecenje preko tijesta.

Napunila perlicama da drzi tezinu dok se tijesto pece.



Tijesto peci tako pokriveno 10 minuta na 180C,zatim sve skinuti i nastaviti peci jos 10 minuta,ako je kis veci treba i vise minuta da se pece.



Izvaditi kalupe sa tijestom,poceti slagati nadjev.
stavila sam naribani sir,persunov list koji sam isjeckala,malo kopra iskidani losos i zalila sa smjesom jaja,vrhnja i zacina.



Stvaila peci ponovo u rernu na 180C oko 25 minuta.odnosno dok ne dobije lijepu rumenu boju !!

KIS OD GRASKA I PANCETE



Isto tijesto kao u predhodnom postu,samo je nadjev drugaciji;
Za ovaj vam je potrebno :
1/2case brasna
2 jaja
1/2 case vrhnja za kuhanje
100gr pancete ili kuhane sunke
100gr feta sira
50 gr sira za pizzu
100gr cherry paradajza

tijesto napraviti na isti nacin,staviti da odmori,zatim razviti u velicini kalupa,peci pokriveno papirom za pecnje i popunjeno perlicama ili grahom/rizom...sta vec imate.
Peci oko 10 minuta,zatim sve skloniti ,pa vratiti tijesto ponovo da se pece ,slijedecih 10-ak minuta.
Nakon ovog pecenja,tijesto popuniti nadjevom i ponovo vratiti da se ispece do kraja..narednih 35 minuta,tj.dok ne porumeni.
