Carrot Cake With Cream Cheese Icing


        Before coming out of India, there were only two cakes in my world, a vanilla or a chocolate cake, never even imagined that you could add vegetables to cakes. When I tasted this cake the first time, I fell in love with the nutmeg flavor in it, again a first for me. My husband's colleague had made it and she was kind enough to give me the recipe, she had used apples along with carrots in the cake. I made it only with carrots and did a cream cheese icing. This is one cake for which I definitely recommend an icing, it compliments the cake so well. I did an eggless version, using flaxseeds instead, the end result was awesome..

Need To Have
  • All Purpose Flour Or Maida - 1 cup
  • Flaxseed Powder - 2 tablespoons
  • Brown Sugar - 3/4 cup
  • Oil - 1/4 cup
  • Milk - 1/2 cup + 6 tablespoons
  • Grated Carrot - 1 + 1/4 cup
  • Coarsely Chopped Walnuts - 1/4 cup + 4 tablespoons
  • Vanilla Extract - 1/2 teaspoon
  • Baking Soda - 1 teaspoon
  • Baking Powder - 1 teaspoon
  • Nutmeg Powder - 1 teaspoon
  • Salt - A pinch
For Cream Cheese Icing
  • Low Fat Cream Cheese - 2 oz
  • Vanilla Extract - 1/4 teaspoon
  • Butter - 1/2 tablespoon
  • Powdered Sugar - 1/2 cup

Method
          Mix the flaxseed powder to the 6 tablespoons of milk and leave it for 10 mins. Sift the flour, baking powder and baking soda. After 10 mins, beat the flaxseed-milk mixture well, add the milk, sugar, mix, then add the oil, vanilla extract, salt, mix well. Now, slowly add the flour, mix and finally add the carrots and walnuts, mix everything, pour it in a greased pan, bake at 350F for 25 to 30 mins and cool the cake. For the icing mix everything together, apply on top and garnish with the 4 tablespoons chopped walnuts.

Ovens differ, so keep checking after 20 mins.
You can double the amount of cream cheese for a thick coating.
